The avocado replaces the butter and is a healthy fat and full of mono unsaturated fats that helps to lower cholesterol and is a source of vitamin E and fibre.

Avocado double chocolate cookies makes 15
1 ripe avocado
¼ agave syrup
1 egg
½ tsp vanilla extract
½ cup cacao powder
60g dark chocolate chips
40g plain flour
1/2 tsp baking soda
1. Preheat oven to 350°F (150°C).
2. Mix the mashed avocado, agave, egg and vanilla extract in a bowl. Use electric whisk if needed
3. In another bowl, mix the cocoa powder, flour and baking soda .
4. Mix together the wet and dry ingredients until just combined.
5. Add the dark chocolate chunks.
6. Add one heaping tablespoon of dough on to a baking sheet lined with parchment paper. Flatten the top a little bit.
7. Bake for 8-10 minutes or until the top has set. Remove from the oven, let cool for a few minutes on the baking tray. Then transfer to a cooling rack.
